Gur Rewari is that classic winter candy your dadi used to give you on cold mornings - crunchy golden discs made with roasted sesame seeds held together by melted jaggery. These particular ones come from Punjab, where making rewari is practically an art form, especially during winter months when fresh jaggery is available.
In North India and Pakistan, rewari season starts around November when the weather gets cold and fresh jaggery (gur) comes to market from sugarcane harvest. If it's super sticky, either it's warm (jaggery softens in heat) or there's too much jaggery in the mix. Dubai heat doesn't help - store them in a cool place or even the fridge. Fresh, well-made rewari should be crunchy, not sticky.
